Regional specialties will include Colorado Lamb Satay\, local Dry Aged Ribeye served with Indonesian sauces\, and Butterflied Trout topped with sambal tomato sauce\, plus seasonal highlights like Crescent Duck with calamansi gulai\, stone fruit and lotus chips. For some comfort after a long day on the slopes\, they’ll also offer hot broth options like Mushroom Soup Jamur with noodles. A special Aprés Ski menu will be available from 2:30-5:30 pm. Guests can also experience handcrafted cocktails like the Calamansi Fizz with gin\, calamansi\, aquafaba\, and rosemary; the Devils Avocado with mezcal\, avocado\, cucumber\, and honey; and the Wedang with whiskey\, benedictine\, honey\, lemongrass (served hot). \nChef de Cuisine Matthew Byk\, a trusted member of Cédric’s team since their early days on Perry Street\, has been enlisted to bring the Wayan Aspen menu to life. With five years of experience leading CVRG’s Vong Kitchen in Indonesia\, Byk brings both cultural expertise and a long-standing connection to the team. \nThe interior design is led by CV Restaurant Group partner Raphael Derly and features a blend of Wayan NYC’s wood\, stone\, and greenery with the cozy feel of an Aspen chalet. The warm and welcoming atmosphere is complete with 68 seats\, an open kitchen\, an inviting 12-seat bar\, a crackling wood fire\, and a transportive display of Indonesian and Balinese artwork throughout the space.
