Award-Winning French-Indonesian Cuisine from Celebrated NYC-based Culinary Couple Arrives in Time for Festive + Ski Season

Aspen, CO (December 12, 2024) – Cédric and Ochi Vongerichten, the couple behind the two popular NYC restaurants Wayan and Ma•dé, are thrilled to bring their award-winning French-Indonesian cuisine to the Rocky Mountains alongside restaurateur Ezra J. William and Raphael Derly, opening Wayan Aspen (614 E Cooper Ave, Aspen, CO) in December 2024.

Following the success of their Wayan pop-up at The Little Nell the past two years, Wayan Aspen marks Cédric and Ochi’s first brick + mortar in the coveted mountain town. The dynamic husband-and-wife duo bring their respective French training and Indonesian background to create a harmonious blend of tradition, hospitality, and innovation. Wayan, their approachable Indonesian restaurant with modern French flair, was named one of Esquire’s 2019 Best New Restaurants and is currently one of the only Indonesian restaurants in the Michelin Guide in America. Recently recognized by The Best Chef Awards 2024, Cédric, who has trained across the globe, including under his father Jean-Georges Vongerichten, brings a fusion of French techniques to their dishes. Ochi’s Jakarta roots infuse vibrant Indonesian flavors into Wayan and Ma•dé’s menus, resulting in a diverse culinary experience that celebrates the vibrant tapestry of Indonesian cuisine. 

At Wayan Aspen, guests can expect signature shareable dishes like Lobster Noodles with black pepper butter and thai basil, Peekytoe Crab Fried Rice with kerupuk and cilantro, the crowd-favorite Corn Fritters, and desserts like Pandan Passion Fruit Custard. Regional specialties will include Colorado Lamb Satay, local Dry Aged Ribeye served with Indonesian sauces, and Butterflied Trout topped with sambal tomato sauce, plus seasonal highlights like Crescent Duck with calamansi gulai, stone fruit and lotus chips. For some comfort after a long day on the slopes, they’ll also offer hot broth options like Mushroom Soup Jamur with noodles. A special Aprés Ski menu will be available from 2:30-5:30 pm. Guests can also experience handcrafted cocktails like the Calamansi Fizz with gin, calamansi, aquafaba, and rosemary; the Devils Avocado with mezcal, avocado, cucumber, and honey; and the Wedang with whiskey, benedictine, honey, lemongrass (served hot).

Chef de Cuisine Matthew Byk, a trusted member of Cédric’s team since their early days on Perry Street, has been enlisted to bring the Wayan Aspen menu to life. With five years of experience leading CVRG’s Vong Kitchen in Indonesia, Byk brings both cultural expertise and a long-standing connection to the team.

The interior design is led by CV Restaurant Group partner Raphael Derly and features a blend of Wayan NYC’s wood, stone, and greenery with the cozy feel of an Aspen chalet. The warm and welcoming atmosphere is complete with 68 seats, an open kitchen, an inviting 12-seat bar, a crackling wood fire, and a transportive display of Indonesian and Balinese artwork throughout the space. Ample outdoor seating welcomes après days and summer sundowners alike.

Wayan Aspen will be open for service seven days a week for dinner, Sunday-Thursday, 5:30-9:30 pm (bar closes at 11pm) and Friday-Saturday, 6-10 pm (bar closes at 11:30 pm). Après Ski service will be available daily from 2:30-5:30 pm.
